What are the best ways to handle API versioning?

hey everyone, im working on a new service and we're at the point where we need to think about api versioning. we want to make sure we can evolve the api without breaking existing clients. what are your go-to strategies? ive seen url versioning (v1/users) and header versioning (accept: application/vnd.company.v1+json), and sometimes even query parameters. what's worked best for you in different scenarios? are there any pitfalls to watch out for
