How do you handle config when it's spread out everywhere?

hey everyone, i've been thinking a lot about how we manage config for our distributed systems lately. we've moved past simple env vars and are looking at dynamic config where services can grab their settings without restarts. what strategies or tools are you guys using for this? are you rolling your own, using something like etcd or Consul, or maybe a cloud provider's solution? i'm curious about the trade-offs you've bumped into
