api design, REST or GraphQL, what's your go-to

Hey everyone, I've been mulling over API design lately, especially when starting new projects. We've usually stuck with REST, but GraphQL keeps coming up. For simpler internal services, REST feels pretty easy to get going with. But when you've got complicated UIs or external APIs where clients need to grab very specific, nested data, GraphQL really seems to give you a lot more options. What's your go-to when you start a new API? Do you usually pick REST or GraphQL, and what makes you decide?
