so, how do you pick between eventual consistency and strong consistency?

Hey everyone, I'm trying to figure out something that's pretty common but also a real headache in distributed systems: when should we go with eventual consistency and when do we absolutely need strong consistency? We're working on a new feature that needs to be super available and fast, so that points to eventual consistency. But, some of the stuff we're doing is really critical and needs to be current, like, right now. So, what do you guys usually do or think about when you have to make that choice? Any stories from when you dealt with this?
