Message Queue Consumers: Just one, or a bunch?

I've been wondering about scaling message queue consumers. When a queue gets swamped with messages, do you usually just add more instances of the same consumer, or do you run several different consumers that all pull from the same queue? I'm curious about the pros and cons I've seen for each, like how complicated things get, whether messages stay in order, and what happens when something breaks.
