when to go with eventual consistency versus strong consistency

Hey everyone, I've been thinking about consistency models lately. We're working on a new feature with user-generated content and some tricky interdependencies. At first, we wanted strong consistency everywhere, but that's really slowing things down, especially as we grow. I'm curious, when have you guys used eventual consistency and had it work out well? What are the main things you weigh when choosing between the two approaches? I'd love to hear about real-world examples and any pitfalls to watch out for.
