What are some good ways to balance traffic for APIs that get a lot of hits?

hey everyone, i'm architecting a new service that's expected to handle a ton of traffic. i'm looking at different load balancing strategies besides just round-robin. anyone had luck with more advanced stuff like least connections, weighted round-robin, or even ip hash for certain situations? what trade-offs have you seen in production, especially with state management and sticky sessions?
