When should you think about using eventual consistency?

hey everyone, i've been thinkin a lot about consistency models lately. were buildin a new e-commerce platform and are debatin between strong consistency and eventual consistency for certain parts of our data. obviously, strong consistency is simpler to reason about, but eventual consistency can offer better availability and performance. what are your experiences? when have you found eventual consistency to be the right choice, and what were the biggest challenges in implementin and managin it?
