When do you start monitoring application logs?

i've been working on a bunch of stuff lately, and we have logging set up, but i'm wondering when you all actually start watching those logs. like, after so much traffic, or when you hit a certain error rate. do you use tools right from the start, or is it more of an 'if it ain't broke' thing until something blows up? really curious to hear how you guys do it.
