api versioning strategies, what do you usually go for?

hey everyone, im lookin to get a better handle on api versioning. weve got a few internal services and are thinkin about how to manage changes over time without breakin existing clients. some people do url versioning (v1, v2), others use headers (accept header), and some even do it via query params. whats been your experience? when do you prefer one over the other, and whats the biggest gotcha youve run into?
