load balancing strategies: simple round robin versus least connections?

hey everyone, im tryin to wrap my head around load balancing for a new microservice. were expecting moderate traffic initially but need to scale. i know round robin is the simplest, but im wonderin if least connections is much better for avoiding overloaded instances, esp if request processing times vary a lot, what are your go-to strategies for balancing traffic and why
