when should you actually use Event Sourcing.

hey folks, i've been thinking about event sourcing for a while now, and trying to figure out when it really shines. i know it can be powerful for auditability and rebuilding state, but it also seems to add a lot of complexity, especially around eventual consistency and querying. are there specific types of applications or problems where you've found event sourcing to be a clear win over more traditional CRUD approaches, and what are the trade-offs you've had to make
